Risks in Taking "Great" Players on "Great" Defenses?

I just started thinking about this and if there should be anything to be wary of in taking, in particular, players from the 'Bama/LSU defenses. Do a couple of studs make the rest of the team look like better prospects, or what about having 11 "above average to good" college players making a couple of guys look like future NFL studs? Is there less risk in taking a "great" player on an average or bad defense? I'm just wondering out loud if anybody has ever thought this out further than I.
